Private Institutional food service as a way to initiate local food systems

Local procurement for relatively small institutions, particularly
educational institutions with a commitment to local foods, is a current
opportunity to establish local food systems and position them for
growth into other markets.

5 Steps were proposed to develop local food systems for institutional food service

1) Create network between growers and institutional administrators. (Ohio Private Institution Conference, April 29, Denison)

2) Form a grower cooperative marketing system.

3) Engage chefs, institutions in educating the consumer about local products.

4) Overcome seasonality and supply issues. Use Center for Innovative
Food Technology innovations, season extension research and education,
student farm activities, and investment in processing capacity for
freezing, drying, canning, etc.

5) Step up from private to public universities, and other large
institutions such as health care, large manufacturing companies, etc.
Use increased support to change vendor and payment requirements and
protocols in ways that promote local producers.

Work Progressing on Mobile Poultry Processing Unit

Work is progressing to develop an ODA approved mobile poultry processing unit. A large working group has met several times to brainstorm how a mobile unit and management system could be implemented. We toured the mobile unit that has just been built in Galion, Ohio, that will be shipped to the state of Vermont.

Growing crops on county owned agricultural land for food insecure

Idea description: 

Create a partnership among a wide range of stakeholder to use county-owned and well field agricultural land and community food bank kitchens to

  1. grow and process staple foods
  2. develop value added high nutrition cereals and snacks, 
  3. distribute food to area school children
  4. create a field trip and service learning program for students
  5. offer living wage for farm work to  county residients
  6. demostrate environmentally and economically sustainable farming methods to area farmers

We would study the feasibility and use the network to create a county task force around food security. We see that task force as a launch pad for the development of a county based peak oil task force.

We are working in SE Ohio, but see this as a potential model for all Ohio counties and beyond.

USDA listening to comments for reauthorization of Child Nutrition Programs

I just learned that the USDA is seeking comments before they update the Child Nutrition Programs, and the regional meeting for Ohio is September 10th, in Chicago. Is anyone from the Healthy Foods Access group (7 members) able to attend and make a presentation? If so, you must register by August 22nd. I hope this collaborative has something planned for this invitation for public comments.

Farm to School starter info

Dave Cannon and I met with our local Wooster City Schools administrators and food service director recently to discuss increasing the fresh and local foods in their school lunch and snacks. I had asked Deb Eschmeyer for some advice and she was kind enough to provide a very thorough reply, excellent information and advice that should be shared! Our nation's health is deteriorating, and a big contributor to the decline is poor diet. Obesity is at an all time high and for the first time in history it has been projected that the life expectancy of our youngest generation will be less that that of their parents!
